Ingredients

  • 5 kg milk

  3. Heat the milk to 63°C and maintain for 30 minutes or switch to a rapid method by heating it to 73°C and then rapidly cooling to 42°C using a clean ice bag.
  4. Add yogurt (1 tablespoon per kg of milk) to substitute calcium.
  5. Integrate rennet (12 tablespoons for 5 kg) and mix gently.
  6. Let the milk coagulate in a covered container for 2 hours.
  7. Cut the curded milk into cubes and allow it to rest for another 30 minutes.
  8. Strain the curds using a cheesecloth, ensuring a soft texture by occasionally flipping the cheese.
  9. Press the cheese with a heavy object for 4 hours for larger quantities, less for smaller ones.
  10. Boil the whey and use it to cover the cheese, ensuring it is completely submerged.
  11. Store the cheese in a clean, airtight bag, removing any air to avoid mold formation.
  12. Age the cheese for 2-3 months, ensuring it’s refrigerated once opened.
