Ingredients
- 1 large eggplant
- 3 cloves garlic
- 1 tablespoon sea salt

Preparation
- Preheat the oven to 400°F (200°C).
- Wash and dry the eggplant, then pierce it several times with a knife.

- Add garlic cloves to the tray halfway through the baking time to roast.
- Once the eggplant is soft, remove from the oven and let it cool for a few minutes.
- Carefully peel off the skin and remove the top and some seeds if there are too many.
- Place the roasted eggplant flesh into a blender.
- Add roasted garlic, sea salt, ground cumin, red chili pepper, and lemon juice to the blender.
- Pulse a few times to mix the ingredients.
- Add tahini and extra virgin olive oil to the blender.
- Blend everything for about 2-3 minutes until smooth.
